It is December 31st of 2015. The dream of Copenhagen and Noma has been achieved. A corner is about to be turned, by me as an artist, and similarly by Rene Redzepi as a practitioner of dreams and dream-sharing. Chef Redzepi is closing Noma's doors and will be reopening the restaurant two years later as the centerpiece of an organic farm in which they have complete control of their ingredients. In the space between, Redzepi has partnered to open another restaurant called 108, "...a more casual sibling." This restaurant will test in Noma's empty room as the entire staff of Noma (including the dishwasher) will embark to Australia for a months-long 'pop-up' of Noma, featuring Aussie ingredients. You see, Rene Redzepi has been traveling back and forth from Copenhagen to Australia to meet local farmers and survey the new regional ingredients. There (like in Japan and England before), Noma Australia will serve dishes which will shake up the world. The Aussie event sold out in under four minutes. At the same time, Redzepi has partnered with Yale University to design a Chef's Leadership Institute. ALSO, there's a feature documentary just released in theatres called, "Noma-My Perfect Storm." Our timing on this journey could not have been better. Rene Redzepi is no ordinary man. He is on the move and fearless. I have no regret and a profound certainty in taking him as an inspirational hero (one of several) whose passion and action I wish to emulate in my own work.
